Cheesy Mashed Potato Muffins with Eggs

Cheesy Mashed Potato Muffins are a delicious twist on classic mashed potatoes. These savory bites are crispy on the outside, soft and fluffy on the inside, and packed with cheesy flavor. They are perfect as a snack, appetizer, breakfast option, or side dish.

This recipe is also a great way to use leftover mashed potatoes and turn them into something completely new and exciting. The addition of eggs and cheese gives the muffins structure and flavor, while the Parmesan coating creates a crispy golden crust during baking.

Easy to prepare and highly customizable, these muffins are a fun and comforting dish that works for everyday meals or special gatherings.

Ingredients
3 cups chilled mashed potatoes

1 large egg

1 cup shredded cheddar cheese

1/4 cup chopped chives

1/4 cup all-purpose flour

1/2 teaspoon garlic powder

Salt and pepper to taste

1/2 cup grated Parmesan cheese (for coating)

Cooking spray or butter for greasing the pan

Directions
Preheat your oven to 400ยฐF (200ยฐC) and lightly grease a mini muffin pan with butter or cooking spray.

In a large mixing bowl, combine the mashed potatoes, egg, shredded cheddar cheese, chopped chives, flour, garlic powder, salt, and pepper.

Mix everything until the ingredients are fully combined and the mixture becomes thick and easy to shape.

Form the mixture into small balls about 1 inch in size.

Roll each ball in grated Parmesan cheese so the outside is coated evenly.

Place the coated potato balls into the cavities of the prepared muffin pan and gently press them down to create a muffin-like shape.

Bake for 15โ€“20 minutes, or until the muffins become golden brown and crispy on the outside.

Allow them to cool for a few minutes before removing them from the pan.

Serve warm and enjoy their cheesy, fluffy texture.
